Meal Plan Monday

Meal plan for the week of February 20 thru 26

Monday - Tacos In Pasta Shells

Tuesday - Chicken Tortellini Soup, French Bread

Wednesday - Crockpot Enchiladas, Mexican Rice

Thursday - Chicken w/Creamy Mustard Sauce, Red Potatoes, Green Beans

Friday - Eat Out

Saturday - Lasagna, Salad

Sunday - Salsa Chicken, Rice

Crockpot Enchiladas Recipe

*4 Skinless, Boneless Chicken Breasts
*2 Cans Cream of Chicken Soup
*1 Can (10 oz) Enchilada Sauce
*1/2 Cup Salsa
*6 Whole Grain Tortillas
*2 Cups Shredded Cheddar Cheese
*Toppings: Lettuce, Diced Tomato, Sour Cream

Cook Chicken with soup, enchilada sauce and salsa in crockpot for 6-7 hours on low. Chicken will pull apart with fork (do this on a cutting board then add chicken back to crockpot and mix).

Fill tortillas with the chicken mixture, roll them up, lay them in a 9 x 13 baking dish and top with cheese. Bake at 350ยบ for 30 minutes OR you can mix the cheese into the crockpot during the last 20 minutes. Serve the mixture in warmed tortillas with all the toppings.
